Umm…this is a link to Amazon to buy the camera, not a link to DP Review.
Their site is in transition. My citation is from a podcast about the move to PetaPixel.

Olympus micro four thirds. I have an OM-D E,m10 Mark III. Satisfied. Sorry didn't wait for the Mark-IV with upgraded sensor.
DP reviews rates the OM-1

very highly for capturing birds in flight but the camera is pricey.
I went with Olympus after reading review at DPReview. Sold my clunky DLSR avec "upgraded." Very happy with it - see attached. The 14-42 is ~28-84 equiv. to 35 mm DLSR. VERY COMPACT. The uograde, Mark IV, has a 20 MPX sensor. Their very latest is a pro camera with westher sealing but not quite worth it unless that is needed, per DPReview.
Glad you like it. Yes, the menus are daunting. Manual: olympus sent a better one upon request.
Yes, OBS. AND, its free.
To edit, use OpenShot, also free.
Read DPREVIEW assessments.
Paris is a least as safe as St. Louie! Like any big city, be cautious - especially in crowds / tourist areas. Stay outta certain East St. Louie neighborhoods.
When I trick a post retirement job doing web pages, after awhile I started dreaming in HTML. Now I volunteer doing web pages for our senior living community using WprdPress. The dreams have shifted to a combo of HTML and WordPress.
Look at the Google Pixel 6 Pro. Hard to beat. Buy direct from Google store to avoid carrier crapware.

I love my OM-D M-10 Mark III. Prices NEW are reduced and in your price range because the Mark IV was released a few months ago.
P.S. The "kit lens," 14-40mm has a marvel. Small, pancake. Approx 30 - 80mm equivalent zoom. The Mark III is s 16 MP camera. The Mark IV ups it to 20 MP.
These cameras have excellent image stabilization. Album:

I used it exclusively for my your of Big Bend, pre-pandemic.

Know why Greek boys never leave their homes?
They can't stand to leave their brothers behind.
Corollary: that's said to be the motto of the Greek army.
No need to do the over write. If there's old data, it will be overwritten anyway.
I second putting /home on a separate partition.
Been usung Linuxfor 20 years. It's great.

Olympus OM-D E M10 Mark IV

Get it with the pancake "kit" lens, 14-42mm (~28-84mm equivalent). Interchangeable lenses but the basic is a good travel camera. I have the Mark III and love it. The IV ups the MPX to 20.
Look for a package deal with the "pancake" lens.
With lens retracted, this camera will even fit in a big pocket!
