NONE OF THE ABOVE. I would buy instead the Sony HX99V that has a ZEISS (best lens ever) 24-750 mm lens and has a pop up viewfinder that acts like a DSLR.

Currently the D500 body only is $1,499.95 and with the 16-70 mm f2.8 4E ED VR lens which I like it goes for $2,099.95 which is a retail savings of $670.00. While I like the savings, I don't want that to drive my decision.

Would you select one of these or hold off to see what the new D760 due out in the fall has to offer or see which other Nikon cameras will get the AF Eye detection upgrade? Thanks for any input.

Sounds like you are considering a wide field of products. SO
1. You said you are getting what you need from your current equipment, so, why not wait for a while and see what develop's (sorry, could not help myself).
2. I know many Nikon folks who has waited for an upgrade just to have their hopes dashed. Nikon has announced nothing about an upgrade to their D750. And further, have not even named the camera or assigned a number. So, good luck with that. It may happen and may not.
3. I never buy the first version of any camera line. If it were me (and it's not) I would use your current equipment and wait for the second generation of Z camera's. If you can't, the D500 is your best option at the moment. BUT wait, Nikon always includes a free vertical grip for that camera during the coming December holidays. So, I would wait until the 2019 Holiday season to make a decision and maybe by then Nikon will surprise everyone with a announcement of the release of the new D770.

2. You may want to reconsider what you are taking. On trips I only take a pocket Sony Zeiss 24-750 mm lens and a pop up viewfinder. I get up to and including 20X30 prints if needed. I have a belt pouch for it. Sony HX-99V

Call Nikon at 1-800-645-6687 and ask them. Impress upon them that it is only a part and that is all you need, as them for an estimate. Stay clam and professional though out you conversation. You never know what deal you can weave. Stranger things have happened.

That chart is a little dated, included with the D5 and D500, should be the D850. They all have the same focusing system. Which by the way, is also a separate from the exposure system, a first for Nikon.

VR is changing rapidly, you should read the manual the lens came with.
But, I would assume (and you know what that means) that a gun stock would NOT hold the camera as steady as a monopod or tripod so, I would also assume that there would be enough movement inherent in your arms to cause enough movement that would make VR a valuable asset.
All of that said, the 80-400 does have a hunt problem, always has had that issue. I use GROUP AUTO FOCUS that may help alleviate that issue, or if your subject is stationary, single spot focus. Also, if your shooting at a distance, on your lens settings also go from full to infinity-8m (or something similar) this should limit the range and speed up your auto focusing system.
Good luck and keep on shooting until the end.
Newer lenses however are much better, like the 200-500.

In the 70's I had Big Foot, an Alien, Loch Ness, and Yeti, all meeting in a cleaning of the woods. I approached stealthily until I had them all in my view finder. I slowly squeezed the shutter. NOTHING, I WAS OUT OF FILM.

Without cropping the image, which is what you want. Your final image will be 8X12. There is no getting around cropping if you want an 8X10, which by the way, was not the ratio you took the image at, that is why you have to crop it.
You need an aspect ratio of 4X5, and you shot it at an aspect ration of 2X3. On most digital camera's you can change the aspect ratio.

Nikon has two lenses that are as sharp as primes throughout their range, but they are heavy and expensive. The Nikon 24-70 and 14-24 are examples of Nikon Genius. And yes, they are zooms, but they are as sharp as primes throughout their range. But at a price.
