I need to learn how to resize images for printing. Take these images attached....I want to print them 8x10 without cropping them. But when I try it wants to cut off or crop the image and I don't want that. I do have LR and Photoshop but just can't figure out how to do this for some dang reason! How can I resize the canvas to a specific size without cropping the image?

The issue is not re-size, it's aspect ratio.

A photo in 3:2 aspect such as your second one will fit without cropping into frames or mats sizes 4x6, 8x12, 16x24, 20x30.

One simple way I've done is to extend canvas size to the dimensions of your frame. Below is an example of a 3:2 aspect extended with black bar at bottom to fit an 8x10 frame. Other folks will have more suggestions.

Thanks Linda!.....never thought of extending the canvas size like that! I like how you did that with the name of the place. I will try that out.

In photoshop you can choose the cropping tool and at the top choose the W x H x resolution and it will resize. Type in for inches instead of pixels. Drag the anchors around to fit the pic into the frame, or click and drag within the frame to move the image around. The arrows let you swap width and height. A custom mat in the frame could take up some of extra space if the aspect ratios don't line up. If you go outside of the pic you can try to click content aware it will try to fill in areas that you go over with similar content.

This might also help

You can try edit/content aware scale to alter the aspect ratio a bit.

Of course image/image size, also does it, unclick the chain link that locks the ratio to change the ratio.

Linda said exactly what I was thinking, but she types Fast!
So I’ll just add that those are two beautiful images.

The image can be stretched or compressed to fit a particular canvas size.
But this only works in shots with no people or other objects that will look funny stretched or compressed.
For scenics it may not be objectionable. You would be the only one who knows.
Like for your two here, the bridges will be rendered taller, as well as the mountain if you "fit" them to 8x10.

I have a vertical shot that may help you see the basic effects of different aspect ratios at https://mymindseye.us/AspectRatio.phtml

You can't have it both ways. If your image is too wide, then either you will have space above and below the image, OR you will have the left and right side cropped, but the top and bottom edges of the image will coincide with the top and bottom edges of the frame.

I really like the "title bar" option idea Linda!
I didn't think of that.

Yes, this is a frustrating problem. If the image isn't in the proper portions, you can't print in certain sizes. You must either crop the picture or extend the canvas, as Linda said. When I post pictures online, proportions don't matter, but printing is a different situation.
