I don’t comment much in this section but always look at what people have posted, so thanks for starting this forum section.
For NYE dinner I made Lobster Bisque (this was a first for me).
Lobster tails are
very expensive - shockingly so. 😲
The first step is to boil the lobster tails, remove the cooked meat (to add back into the bisque), saving the tail shells and reserving 2-cups of the lobster water.
The second step is to make the broth, which is the photo posted below. You sauté the usual (onions, garlic) in butter with chopped celery, then add the reserved lobster water, chicken broth, wine, various herbs and aromatics and simmer for about an hour.
It smelled delicious.
I made the broth a couple days ahead of time and then NYE made a golden roux, added back the broth along with heavy cream and the lobster meat. The lobster meat was perfectly cooked by the way.
It tasted fantastic, but the bisque consistency was a bit thin, not sure why because I followed the recipe exactly.
I would like to try this again, this time getting the bisque consistency correct.

My husband hates 'shrooms too.
Therefore I seldom use them in cooking (never mind that I enjoy mushrooms, but in moderation).

Very colorful / nice photos
We love Anza Borrego and have been there many times.
The Slot Canyon is an easy walk, but you can't be obese or you may not fit through (really!).
It is not real colorful, but it is still fun and an interesting place to hike.
I've attached attached a few photos to show the terrain (took with a cell phone).
Other places to visit:
Fonts Point (there is a long stretch of dirt road, but we made it in our Passat, although it would have been easier to navigate with a higher-clearance vehicle). The view is worth the drive!
Palm Canyon is very popular and a relatively easy hike - at the end of which you are rewarded with an oasis that is filled with palm trees and grassy areas. The palms burned several years ago, and we haven't been back there since the fire but I understand some of the palms have recovered.
