Here is Christmas Eve Pernil. Marinated with salt, black pepper, garlic, oregano, oil, white vinager and poultry seasoning. Cook for 7 hours at 325degrees. The fist 4 hours covered with aluminum foil and the last 3 uncovered.
Made shallots cuts in the surface of the meat to aid the absorption of the flavor when marinating and allow the fat to drain. ( last step of shallots cuts is optional)

Excellent photos, impressive roast - sounds delicious. Looked up a recipe - don't know if I can get that cut with skin on out here.

You can use either the Boston Butt or Shoulder - I prefer the shoulder.

Thank you! I'll be in the City toward the end of the week and check my options. There are a few very good small meat markets.

Se me olvido algo si habia yuca en escabeche. Pasteles un poco dificil de encontrar aqui en central Florida la calidad nones buena. Nada como los de la Vieja!

Los pasteles siempre deben ser caseros. Estoy bastante seguro de que puede obtener en el centro de Florida los ingredientes que necesita para hacerlos - Platano, guineo verde, yautia o malanga, y hojas. La receta es muy sencillo, pero se necesitan dos días para hacerlos.

Pasteles [a kind of tamale made Puerto Rican style], should always be homemade. I'm pretty sure you can get the ingredients you need to make them in central Florida - plantains, green bananas [special for cooking, not eating], taro root, and banana leaves. The recipe is simple, but it takes two days to make them.

In my home it was a family project - everything was made by hand, grating the roots on a box grater, wrapping in leaves or parchment, tying them, etc.

In addition to the ingredients above (for the masa), a simple preparation of well-seasoned small diced pork shoulder,with the usual recaito (or sofrito)seasoning, raisins, tomatoes, more garlic and chopped onions, aji dulce (small sweet peppers that taste like scotch bonnets but with zero heat), and achiote (annato) oil .

Tenemos todo aqui para hacerlo la vieja me enseño hacerlos pero El Raton me tiene super ocupado en estos dias.

Los dias libres son para la jefa. You know Happy Wife, La vida es mejor. Lol

We've been married 45 years - I am very familiar with happy wife, happy life. How do you think I got all of my camera gear? (actually it was business, but still we make decisions like that together).

But I am the jefe en mi casa - She is VERBOTEN from entering MY kitchen - I don't think she minds though. She is German, btw. She loves el sabor criollo! And I am a decent German/Swiss cook/baker. Makes for interesting meals.
