IS is very very helpful. It does slow down the AF, but not that noticeable. I have taken some bird in flight photos, and couldn't of gotten the shots without the IS. I have a Sigma 18-250mm lens on my T3i, and it does a good enough job for me. The newer version can be had for around $350.00. It has IS and my older version works great. Hope this helps you.
I'm just starting out, and I offer to do photos for people, but I also tell them that I'm not a pro. I keep within my limits, and if it's beyond what I can do, I recommend that they hire a pro. I say that I do cheap rates right now, but that's only because I'm just starting out. As I get more experience, more confidence in my skills, and more knowledge, then my rates will reflect on that. I offer cheap rates, but not cheap quality, and I can only hope to develop the skills and knowledge to back that up. This is why I love this site. People helping others to learn and grow in an exciting new field for them.
I have close to 20K in my shutter count, and I can honestly say that I have an eye to see what I want the photos to look like, but I don't always capture what I want. Are all my photos great? I know that they aren't, but some are keepers. I just hope that I can get better, but only time and practice will help.
Don't forget to check out Sony and the other manufacturers too. I have the same camera that you are looking at, and I love it. I have had it for almost a year now, and already have close to 20K in shutter count. I shoot the same as what you want to, except for the sports. Do your research and have fun with whatever you get.
