The m4/3 option is one good option, but I have found the Canon M-mount APS cameras to be excellent with little bulk and little weight. Not a great lens selection, but having lots of lenses would defeat the lightweight, less bulk goal. Two M lenses will cover about everything she will ever need and three will probably be more than needed. I use two M bodies with the lenses permanently attached. I have a Sony RX10iv and find it too bulky and its 1" sensor is awfully small. With that small a sensor I prefer the RX100vi.

I have had several notices that I was part of a class action lawsuit unless I told them I wanted to opt out. One said that the plaintiffs would get nothing and all proceeds would be used for legal costs. I opted out hoping this would lower the settlement and reduce what the lawyers got. Many class action suits begin in states where lawyers can contribute heavily toward judge's reelection campaigns.

Your camera is APS, so with the crop factor your 28-300 is not really a wide angle, so I'd also take the 11-16. I used APS 11mm quite a bit when I was recently there.

My advice: The G7 and both lenses. At your excursion stops put on the lens for what you will be seeing that day. Use your phone for backup for situations where the lens you took that day doesn't cover everything. Switching lenses on excursion trips is a real pain in the ass ... what I actually do myself is take two identical cameras and leave the lenses on them. That's where the small size and weight of m4/3 is so great (I use two GM5 bodies).

I'd take Longshadow's above recommendation. The 24-120 is most likely not nearly as wide as you'll want. It's equivalent to about 36mm in full frame, which for me is not nearly wide enough. You may easily find that his recommended Sigma will do double duty for both landscapes and sports.

I'd go with the 2x unless you need more light getting in. With the 2x you will have 24-800mm and be able, when necessary, to carry two bodies and two lenses both ready to go.

I've been there several times and never felt as though a phone would be enough. But, your 18-300 (= full-frame equivalent of 28-450) has more reach than you will need but less wide angle than you will probably want. I'd suggest picking up something lightweight that goes wider ... perhaps a used Sony RX100 vi. I also often carried two Panasonic GM5 bodies, one with a 7-14 and the other with a more normal range zoom. These are tiny and lightweight. The GM5 hasn't been made in a while but can be bought used. They came in black and red -- the red looks very touristy and is less attractive to thieves. The thieves are very good. The work in teams and rehearse before going out (we once stayed in a hotel used by thieves and watched them practice after breakfast). A common ruse is one spots the "mark," a second "accidentally" bumps into him, the third makes the snatch and the second then blocks your going after the snatcher by getting in the way and apologizing for having bumped into you. Native Italians can recognize thieves a mile away, but most tourists can't. Thieves recognize tourists by the way we walk. Our gait and arm swings are different because we are not used to being as hemmed in by crowds.
But its a great place to travel. Enjoy and be on guard.

For lightweight, versatile travel you cannot beat m4/3. Panasonic Lumix or Olympus, but the better Olympus cameras and lenses are heavier. I use Lumix for travel and Oly for action. Lenses are interchangeable. (Caveat: for larger prints such as landscapes I also have full-frame.)

The above has some good advice, but don't expect a high hit rate. Just enjoy the shots that come out well. And if railroading through then ALPS, much of what were the most scenic section are now tunnels.

If going 4/3 also consider the Panasonic GX9 which is smaller, lighter and, like the G9 and Oly EM/OM bodies, also has a real viewfinder. Another alternative is APS. Canon made some M mount cameras which are still available (my favorite is the M50 which has a viewfinder) and are good, small and very light weight. Not many lenses for them but the lenses they do have cover all the range anyone needs and even weigh less than many of the 4/3 lenses. I use them for travel: two bodies and their lenses (11-22 and 18 - 150) left on permanently. Not at all heavy and ultra convenient. I think for travel nothing beats this combination. By the way, I am 86 and feeling it.

Near the end of her career, Miss Budweiser made a record attempt in California. I don't remember the name of the body of water, but it was used annually for record attempts. Bud made a warmup run before doing the two-way pass for the record, but near the end of the warmup broke a quill shaft and that ended the attempt. In the warmup it was clocked at about 240mph. In those days I did a lot of photography for American Power Boat Association, and I believe I was the only one who took a picture during the warmup.
