Full frame is a lot more expensive but worth it if you can afford it. I recently went full frame and don't regret the huge amount of money it cost me because I'm very happy with the results.

The best for ease of use but I upgraded to Aperture and much prefer it after the initial learning curve. Lightroom4 does a couple of things better, but you can't beat the UI of Aperture
With 'just one lens', if dollars allow for it, Canon 24-70mm F2.8L. A great everyday lens to cover the lengths you need for most people type of pictures. I use a separate zoom lengths for sports when I need something longer. Good luck to you.
