Lightroom is quite easy to use actually. It comes with some presets, and there are others available for purchase, and if you find a preset that will work on most of your photos, workflow is fast and easy. If you want a little more detail, you simply need to adjust a few settings and you are done. Also, if your photography is mostly similar, and the same adjustments can be used on all of your photos, you are able to edit the first photo, select the rest of your photos, and sync the settings all at one shot. There are many tutorials on You Tube and instructions on Google. If you buy the subscription for $10.00 per month, it will stay updated in case you ever buy a new camera, you will always have a program that will read the raw files.

If you are satisfied with what you are creating, stick with it. In my opinion, upgrading is more about the added features you are able to get, such as a faster focus, frames per second, the way the controls are laid out for ease of use, and things of that nature. The higher pixels are just added bonuses. Look at the Nikon D5 and D500, they actually lost megapixels, went from 24 to 21, and they are considered professional models from Nikon. Some say the more megapixels the larger the print, but you seem to be impressed with your 12 megapixels and the 30x40 prints, so, why change?

I am not a Canon guy, so I will let someone else advise you on a model of Canon. But, when you decide what you want to buy, I would recommend you check out KEH for used equipment. It is a great way to save some money, and they usually give a decent guarantee on the products they sell. B&H Photo and Adorama are great places to shop online as well. Good luck with what ever you choose.

There is a plug in you could use that plugs into the charge port, but I have found that a great deal of devices will not work properly do to a low power level, so check with Apple before you purchase. If you do get the iPad Pro, there is an app called Photo Manager Pro 5 that is a great app for storing your edited photos on your iPad. Unlike Photos, you may put your photos in individual folders for easy access.

You are near so many great places to see. Google Sparks, Nevada and bring up the larger map. Decide how far you are comfortable driving, draw a circle with that distance figured in, and enjoy. If you decide to take day trips, or even a few days, check out roadtrippers.com. it is a site that will highlight sites to see along the way.

Check with KEH for used equipment. I like the Tamron 150-600mm, but it may be too heavy for you. KEH did not have that lens, but they had a couple of 18-270mm for around $195.00 that may work for you. Good luck with your search.

I had a photo of a black bear printed on glass at fracture.com. It turned out really well, but I am having a hard time getting used to not having a frame and matting. My wife and friends say it is a great photo, and they are correct, it is just hard to get used to it.

If you are renting a car, drive up into the mountains. You are already going to the zoo, you may want to see Sea World as well. You could drive to the desert as well. Check out a web site called roadtrippers.com. Use your hotel as your starting point, then use Los Angeles as your destination, and it will give you locations of interest along the path. Not suggesting you go to Los Angeles, although it would be a great day trip, but just use the city as a reference point to see what is of interest between San Diego and Los Angeles.

All of my cameras are set with back button focus. It took a bit to get used to it, but once I did, I can not imagine going back to half button focus. The advantage is you may acquire focus, then reposition for composition without losing focus on your subject, you have instant ability to manually focus without needing to turn of auto focus, you may hold the back button focus for continuous focusing on moving subjects. If you decide to try it, take your camera out for a day and make yourself use it all day. Take lots of photos so you get used to it. I think you will like it.
