If you're only taking Interstates, you're driving. Not sightseeing.
Yes, there's some nice spots for piccies, but not that many. All the above suggestions are good for places to stop.
If you want to take a pic of something you see while driving, you need a place to pull over and move around.
Not a good thing to do on a interstate. Especially those interstates. Way too much traffic, way too many people in a hurry.
Just way too dangerous, event some rest areas are dangerous, drivers don't watch where they're going.
I spend anywhere from 5 to 10 hours a day driving a semi. 500 miles is normal, 700 miles possible if I take minimum breaks. Interstates are great for keeping a reasonably steady speed, but lousy when you see something that would make a good photo. And you can trust me on that!
If I was running that route, I'd settle for run down and back because the weather's not that great in Feb anyway, and do all my pics in FL. Theres lots of things to see, and you have the added bonus of reasonable weather. You won't run out of photo ops in Fl!
I saw a real working pay phone at a warehouse where I delivered today.
I like it. Theres stuff to look at.

Twin Arrow Trading Post no longer exists. There's a nice new Twin Arrows Casino. But, in their favor, their restaurant has the best steak I've eaten. Navajo raised, no nuttin but good grain and grass.
