It probably depends what state and city you live in. If you live anywhere in California then the law would probably protect her from what they would probably call your "verbal harassment", even though it's your property. In Texas we wouldn't mind if you shoot her for property theft.
Post a legal no trespassing sign slightly on your side of the property line. By legal sign I mean going to a hardware store and purchase one because they are of the correct size and have all the legally required stuff on them. Any city council or homeowners group would have a hard time penalizing you for posting such a sign, especially since you have had trespassing problems. I’m assuming it’s the faucet on the side of the house. Not like you would be posting a billboard in your front yard. If that doesn’t solve the problem and you call the cops and with that sign they have a good reason to go talk to her. Otherwise they will tell you to go talk to her yourself.

Alternatively, buy her a longer hose.
Keep on good terms with a neighbor. I think it's good policy in general.

If you don't care if she is doing it then why do you care about putting up a sign? What is the point? To make her decide to stop? But you don't care if she does it. To make her interact with you? In other comments you said no. Why do you want an otherwise meaningless sign if you aren't trying to stop her from stealing your water or get a way to interact with you? Please expand and make sense.
Just put a "Private Property" sign on your house by the faucet, that's all you need to do. She knows she's wrong, but will continue to use your water until you put a stop to it.
Knock her out when she steps onto your lawn. She'll understand after that.

I am sure it would piss her off. I don't know if she would try to call the city and try to get me into trouble. I don't know if I can get into trouble for doing so. I want to piss her off. But I am 100% sure she will be pissed off with such a sign.
The faucet is on the side of my house and is clearly in my property.

Take a utility knife and cut the female hose connection off about 2 feet from the end of the hose. More effective than any sign will be.
Didn't I see you once on the Jerry Springer Show? I am wondering why you are so afraid of this woman. If you don't want her using your water, then simply tell her if you're not chicken to do so. In so many of your other posts, you seem reasonable, but here you are demonstrating that you have earned your UHH "Whine and Complain" medal. Also, most outdoor faucets have a turnoff located inside. When you think it is about time for her steal your water turn off the faucet.

You guys really don't understand. The sign would piss her off so badly that I have to make sure the law is not on her side. I just want to know if I violate any law by posting such a sign.
