As far as switching away from Nikon - that is not something that is going to happen in the near future. I am first and foremost a wildlife photographer.
The EVF “reaction” to an exposure varies, according to the model and how you set up the camera. Mine has an electronic shutter with a ‘no preview’ option. There’s a small red dot that blinks. If you want, you can turn on a fake shutter noise... the finder image is steady as a rock. It’s great for events where no noise is acceptable.
The Nikon FTZ adapter is great, but a tad slow. Nothing beats new, OEM mirrorless lenses if you need speed. The new lenses are also sharper than old dSLR lenses, as a group, because they are easier to design than dSLR glass, and computer aided lens design and manufacturing keep getting better. And there is NO need to tune any lens to a mirrorless camera body. Focus is achieved on sensor.
