In photographic terms, there might not be much difference. However, there might be a significant difference, depending on the person using the term. "Shot," as in "nice shot," means someone took a good picture. "Capture," as in "great capture," means the the photographer managed to capture that single, perfect moment in time. A split second before or after, and it would have been just another photograph. The execution shot from the Vietnam era comes to mind.
