Don't know a lot about canon. I have an A2 that I got almost by accident. So far, the more I shoot it, the more I like it.

I'm using an e620. My biggest lens is a fixed 200mm Sears with m42 thread. I use a fotodiox adapter and a 2x with it. On the 4/3 system that yields 800mm equiv. at about f8. Not fantastic, but I have very little money into it.

It seems to me that what you do in a restoration depends on the goal of the restoration. Broadly, the goals may be aesthetic of historical, or perhaps both. These goals might conflict such as adding something back in that is missing from the source photo...
I bought a Manfrotto 732YB,482K M-Y Tripod and Backpack Bundle Kit for 99.00 at Ritz. I then switched the small ball head on for a pan head from a manfrotto ( a 391RC2 ) that I already had on a window mount.
This works well for me for traveling. It's light and fits well into my bags. On the negative side it's short (I have tilt screen on my main camera body) and I don't think it would be stable in wind. But, I can also take it hiking without feeling like I'm carrying a bundle of tent stakes.
Remember you can always use other things, like bean bags, in a pinch.
It's always a challenge to figure out how much to spend to get something that works well for you, and what works well for one isn't necessarily the right thing for another.
My favorite is the 3rd one, but of course it all depends on what the photo is meant to show and how it would used. I like the other 2 as well, but would use them differently.

Different things work better for different folks. Myself, I prefer things like the TheGIMP, Irfanview, RawTherapee, etc. They are free, open source, and maintained by volunteers. You don't need to mortgage your 2nd child to pay for them. That being said, they aren't the same as commercial stuff. They usually take more work to learn as there are less books out there that cover them. *Sometimes* they don't do everything you want, or they do it differently, but sometimes they do extra things as well.
For me, they have been worth spending the time. Your mileage may vary...
