I can only tell you what they teach and that I don't do any more than adjust exposure if subject is too dark which tends to happen when I shoot raw.

My instructors, John and Barbara Gerlach, who are world photographers and only use CS5 to manage and print photos. They will not teach the art of manipulating other than HDR.
And I won't either.

Rachel,

My whole objective as a photographer is to get the best quality photo right out of my camera. I don't use photo editors because I don't have the time or the patience to make it into what it should have been in the first place.
I only use Aperture to manage all of the pics I have and maybe lighten a dark exposure.
I feel that is what defines a real photographer.

The Rebel only chooses it's own ISO in AUTO mode. All other modes it is chosen manually. Canon's native ISO is 200 and is where I start with my settings. If I need to go higher I won't go above 800 because noise is too destructive above that and not worth shooting. The next choice is either shutter or aperture depending which is more important to me for that shot. If it's moving wildlife I keep my shutter speed around 1/2000 if there is enough light at f/2.8. I watch my histogram and expose to the right.

It is a fascinating world and I'm doing everything I can to see as much as I can through my camera. I have lots of family from Stratford to Fairfield. Maybe our paths will cross.

I wear glasses myself except when taking pictures. I adjust the diopter on the view finder to adjust for my eyesight without my glasses getting in the way.

My wife and I went to their Michigan workshop in August.
It was the greatest time spent on learning our own equipment.
It's run by a couple, one who is a Canon Explorer of Light guru and his wife who is a Nikon guru. When they take you out they don't take their own gear. They take you with your own gear and show you how to use it to the max capability.

I use a card reader instead of plugging camera directly to computer. No problems with driver issues regardless of what camera is used and load all of my raw pics directly into Aperture or other software.
