I live on the East Coast (DC area) but will be in the Utah/"Colorado/ Arizona areas this fall.

What is your recommendation?

If you can't get closer with what you already have then go for environmental shots of the wildlife. These can be more interesting than a close up shot in my opinion.

Love using primes. On my d7000 I only use a zoom, 11-16, 18-200 and 80-200.
If I am using my d800e I only use primes, I take just two with me, one of them always being my 55mm macro. I find being constricted helps my creativity. My choices are 21, 28, 40 and 300mm.

I'm a big fan of Photoshop. If you do one thing at a time it is not hard at all. Plenty of information on the internet to show you how to do whatever you want to do. I'm, not knocking the highly regarded Lightroom, so many of the greatest photographers use it but found it frustrating and lacking, you can read my opinion here.
