It has already been recommended to turn on the highlight warnings and use the histogram to evaluate your shots, and I would recommend using the RGB hostogram, not just the luminosity histogram. If you have a lightmeter try taking an ambient light reading of the scene or if you have an 18% grey card you can set both your white balance and exposure using it. You can also try if setting some exposure compensation if the problem is pretty consistant.
