Micro 43, Lumix G9 or Olympus O-MD with Pany-Leica 100-400 and 12-60, that's all you need.
I use Smugmug for sharing lots of photos. Facebook for ones and twos. I really like my Smugmug site as a semi-permanent repository for my favorite pictures.
If you had been to South Georgia, you would know why they don't look real, the whole place looks unreal!

Yes, Lumix G9 with 12-60 and 100-400, that's all you need for travel. I went to Ireland last year with that kit, never used the 100-400 but then we did not go after wildlife. Just got back from South Georgia and Antarctica, used the 100-400 a lot, a real lot!
Use as fast a shutter speed as you can with given light and reasonable ISO for moving animals or you being in a moving or wobbling vehicle. Even the other people in the vehicle jockeying for position can rock and roll the truck. Its hard to get a totally steady shot of a not moving animal or bird. Don't have your settings ready for a simple steady shot when a great bird flys by or lion walks up. Be ready for the moving animal and dial down from there if you can.
The Platypod is a really cool small "tripod" without the tripod. Great for traveling.
I like Aluminyze, not cheap but they do a great job.

You need 2 cameras, one with a wide angle lens, the other with the longest one you got. No changing lenses, too dusty, no time. Idea of using phone instead of the wide angle is doable but I like cameras.
With M43, used Lumix GX-85 with 12-60 (24 to 120 equiv) and G9 with 100-400 (200 to 800 equiv). Light rig compared to Canon/Nikon but great reach.
Just went on safari with 2 cameras, GX-85 small camera with 12-60 Leica lens and G9 with 100/400. Great combo to cover all situations. Two cameras weighed less than most peoples one camera. The GX-85 takes great pictures but the G9 of course is bigger and better!
Take the High Road to Taos from Sante Fe to Taos, several photo ops at old adobe mission churches on the way. Stop at Chimayo for the Sanctuario and also at Trujillos shop for hand made New Mexico weavings and pottery.
Great shot of the Guanacos against the sky/mountains! I was down there and was constantly trying to be in the right place for the silhouette shots, got some but not as nice as yours!
If going on a South African Safari, South African Airways has an 8KG, about 18 lbs limit for your carry-on. That is pretty easy to exceed with Full Frame lenses and cameras, especially if you have I-Pad or laptop also in the bag. When I was there in 2017, my bag was slightly over the limit but they did not check. In the USA, I don't think there is a limit on weight, just size. My new M4/3 outfit will not be a problem :)
