I use manual with auto ISO almost 100% of the time. With modern cameras, ISO is my least important setting. I use EC to adjust for backlit or other tricky light. For me, the wrong shutter or aperture can ruin a photo. I can work with some fairly high ISO if shutter and aperture is where I want or need it. YMMV.

I'm 83 and LR and PS are the "gold standard" for post processing. There are many on this forum who bitch and moan about $10/mo for Adobe's product. Don't let that influence you. It's a bargin.
So long as the photographer/artist reveals what was done to achieve the results, I think it's fine. Competitions should just update their entry rules to accommodate or restrict entries according to the preferences of the sponsoring body.
Look up Western Tanager. As others have said, it's hard without a side shot. I just don't know if the bill is correct for goldfinch but that would be another possibility.
