I recommend you consider purchaseing the reference/tutorial book "Adobe Photoshop Lightroom CC/6 the Missing FAQ" by Victoria Bampton. It is available from Amazon for Kindle ($32.95) and paperback ($46.95). i recommend buying the paperback version as she "gives" an ebook version (including Kindle format and others) along with additional benefits (see page 576 of the printed version!).
Not only does this reference explain what to do but how to do it and the reasoning of why!

The Nikon D7100 does not have a Panoramic shot setting but it does have a Landscape Scene mode described in the manual on page 41.

Investigate "Collections" in lightroom! One image can be stored one time in any organization you are comfortable with then dragged into multiple collections to later "find" the image. Suggest you investigate the Lightroom reference: "Adobe Photoshop Lightroom CC/6 The missing FAQ" by Victoria Bampton. This book is FAR MORE than just a FAQ and answer reference - in fact it is a tutorial and a desk reference. If you decide to purchase the book I recommend you get the paper version (slightly higher price at Amazon) as the author gives you an ebook version if you register your purchase with her.

A recent (5 or 6 months ago) I read a review and comparison of Nikon vs Cannon by a "professional photographer" (I do not remember his name or the web site of his review). The results: AT THAT TIME he considered the Nikon to be a superior camera but also considered the Cannon to have superior lens. Toss up in my mind. That having been said my advice is to choose the camera that FEELS best in YOUR HAND.
