Yes u1 is user settings just set that as bk and it will hold until you change your mind.
Before you go anywhere do a search for images on the date you uploaded them. Sandisk have a program to recover lost photos and file try them.
In the menu you have a bk setting that's your bracketing mode it will take 3 shots, 1 over exposed, 1 under and one exposed properly.
It's a good camera very easy to use good sized sensor you may have to get a zoom lens with it for auditoriums though as the lens that comes with it won't do.
As long as the couple are happy with you doing the shoot just enjoy yourself try and get them to relax, use your common sense. We all had to start somewhere.

Try editing with camera raw you can adjust everything as its none destructive
Ask the Epson will send drivers if you contact them, canon may do the same.
