I have considered a similar path. No decision yet but if you want a monitor bigger that 24" you are faced with the large monitor purchase regardless. I would consider 3 options:
1). buy the 24" iMac and add a second monitor - I have used 2 monitors for several year and find it very useful
2). check out the Mac mini or a high-end notebook Macs and plan to add a large monitor for a 2-monitor system.
3). do what your proposed.
It would all boil down to the best cost/performance package for my needs with emphasis on future adaptation of the ever-evolving OSX updates. But, what every you do get lots of RAM. :)

You could use an iPad (Apple) and a $10 adapter to load your files directly from your SD cards. Then, view/edit using the on-board Photos (Apple) app.

I travel as light as possible (no checked luggage). This adds only 1/2 oz. to my kit with essentially zero volume; no wires, power supply, etc.

I have used OWC equipment off and on for over 15 years. As already mentioned, OWC drives are "built like a tank". However, they typically ship with huge separate power supplies (do not know why) and (in my view) are not price competitive. The only drives I have ever had fail were OWCs; one under warranty which was replaced after I paid to ship it back and another after the warranty expired. After using these drives for about 10 years, I have since switched to lower priced USB buss-power drives - use them for a few years and then replace them before they fail. OWCs are good drives but I don't think they are any better than the usual suspects.

We we're there in mid-September 2021 and found it very crowded - difficult to find parking.
Biggest problem for pictures was smoke/haze on canyon due to CA fires.d. Be sure to map out good places to take pictures preferably away from lodge area.
