Yes and no.

Yes:
Color filter that were used before do still modify the capture spectrum. Some camera will try to correct the capture... This will not prevent you to work in post-processing.

No:
Software is capable of pulling a rabbit out of a floppy hat. You just need to be aware of the methodology.
If you use PS CC...
► Do not use desaturate, ever.
► Create a selective color layer (adjust second, precise color adjustment, per color, limited effect)
► Create a B&W layer (adjust first, global adjustment)
► Add a tint layer to achieve whatever you like as a monochrome image.

Note: you can also use gradient layers...

I think I found the origin of the problem...

The original used. It looks muddy. After correction, the result is much better - Not perfect -, in my opinion. And, no, LR 'noise filter' is far from coming close to emulated grain.

Going for? Adding grain to a B&W image, not noise. The thread title is an issue here.
The question is how to apply it. I solved the size issue, a better sample might be useful. I did not find anything suitable.

I am currently working on that and need the input from the folks in this section.

My experience...
► Grain depended on the emulsion speed (ISO) more than anything else.
► Grain was formed by clumps of silver. The higher the ISO, the larger the clumps.
► Grain was random in distribution and size.
► When enlarging a negative to create an image, the clumps were also enlarged and as sharp as the projected image.
► Grain was black, not gray.
► Grain visibility depended on the luminosity of the image projected. It was almost non-existent in the black, preeminent in the mid-range and nonexistent in the highlight.

Finding samples of film grain online is not as easy as it seems. I found numerous samples, but all were small. Resizing them is not an option.

What do you mean by 'soft grain'?

Film grain depended on the emulsion speed, the fastest the films the more grain (as larger clump of silver). When in the lab, the grain became larger depending on the enlargement size. It was also as sharp as the projected image.

Note the black area are masked out because 'real' noise was visible in the midrange, almost invisible in the black range and greatly if not completely absent in the highlights.

There was a thread about creating noise that did not look like 'digital noise'. I had an idea on how to do it, but I did not go far enough... I was on the right path, thought.

It took me a couple of hours to do it this morning, I think.

Posted are the before and after, please comment and let me know what you think. Do not hold your critics, I want/need them.

I am not quite satisfied with this, but I think I am on the right path.

Note this is the real size.

Using the tutorial I posted, I created the same effect in minutes...
 
The original image was small (center one)

Process (additional to the one offered)
Create a large canvas
Copy and paste new layer, transformed it into a smart object.
Moved it to the center of the canvas.
Followed the tutorial.
 

I did not follow the exact scale.
