Get the D500, then get out there, shoot lots of pics and have fun with it.
Develop your senses with that body and use and keep the inventory of glass you have. FX or DX doesn’t matter, both work on the D500 and you will quickly see which lens works for each photo op.
The D500 is an outstanding platform. Did I already say get out there, shoot lots of pics and have fun with it.
It’s the most fun you can have with your pants on.

Nikon sold it to you once before so it's no longer new. So even if for example you could buy a prototype of the Nikon Z9 and resell it to me it's still used and not new.
But all the Z cameras are available new including the Z6 and Z7.

My Z is a refurb. Someone else owned it. It’s still one of Nikon’s new cameras. And of those new cameras, only two are DX.
Nikon has no truly new DX SLRs ... only unused old ones.

The impression I got from your post was that you have enjoyed your 5100 but sense that it is time for an upgrade to something newer. One of the great advantages of the D5000 series is its small size and light weight. If that happens to be something important to you then the D500 will feel quite large and heavy. Anything in the D7000 family will be somewhat larger and heavier.
Another possibility is to jump a few models ahead and buy a used 5500 or 5600. Both are available much more cheaply than new models and will feel very comfortable as to button use and menu structure.

Check the For sale section here, D3200prime has a very nice looking D7200 for a great price. I think you'd be quite happy with one, and any lenses you have been using would work. Good luck in your quest.
D7200, excellent camera, it gives the same quality photos as my D500, costs much less.
