In your situation, I would sell the Nikon stuff, and get deeper into the Sony gear. Currently, I am a Nikonian, and see no need to go elsewhere....but I am not you. I am not weak enough that weight considerations make a Sony MILC worth trading my Nikon DSLR gear for. The fact that other photogs are opting for MILCs is not sufficient reason for me to follow suit. As long as my current Nikon DSLRs are still working, I will keep using them. However, YOU are already into the Sony MILC system, so you may as well get further into it. If you are ever going to sell your DSLR stuff, the sooner you do so the better it will be for you, in a monetary sense. The longer you wait, the less money you will get.

You do seem to be faddishly driven, though. The Nikon D7500 only came onto the market two years ago, and already you have pretty much abandoned it for something newer. Might you then abandon the Sony in a year, or so, for something newer, and different....perhaps a Mamiya YK12, or whatever the F? If you are going to keep buying the latest fad stuff every year, or two, you are pretty much going to have to sell all of your older gear to barely afford the newer stuff. I have nothing against newer, or even faddier, stuff....but never buy it just because it is newer, or faddier. I get what suits my needs at the time. I keep using it as long as it keeps on serving my needs. You need to do what suits you.

I believe you answered your own question when you said, and I quote you here, "the Sony is just so amazing that I am shooting with it almost exclusively".
Always follow your instincts, it will never let you down, unlike most of the advice you get here.

I also have that special place in my heart for Nikon. Since my photos look awesome when shot with my Nikons, I don't need to try another system which may or may not be marginally better.

Go with the Sony system. I traded in all my Nikon gear for an Olympus e-m5 II and never looked back. I take it everywhere! (And I loved my Nikon gear but I’d didn’t take it out nearly as often as I do my Olympus.)

Judgemental much? She clearly stated that she bought the Sony for travel. There’s nothing there that indicates she’s driven by trends or fads. I recently bought a Panasonic G9 for travel and kayaking, where my Nikon’s are too cumbersome. I’ve been so impressed that it seems to be the camera I grab first when I go out to shoot. Although for me it won’t be a complete replacement because there are a few areas, like low light, where the Nikons have a clear edge.
