There’s no reason to save as DNG just for LR or PS, but if you use the Topaz products as part of the raw workflow they will convert the file to DNG.
As for the colors, what everyone says is true. If you’re working from raw it doesn’t really matter what camera you use, but in my experience the Nikon raw files have always been my favorite to work with.
