Why do they do this???

I do exactly that .... more than "exactly that" in that I know
more ways to test need-or-not of the hood, on a zoom, than
you can likely invent in a month of Sundays. Approximately
half the lenses I've checked benefit, at least in some certain
specific situation, from their hood. The other half show zero
need, image-wise, of their hood. Admittedly, the hood is still
useful as a bumper and in rain or snow, but some lenses get
no other benefit from using their matching hood in any way
whatsoever. None. Zilcho.

Real photographers take great photos. Period. Lens hood, no lens hood, ball cap to block the sun or a complex sun shade, with a camera strap or without, manual focus or full auto, digital or film ..... It is overcoming the technical challenge during a particular shoot and composing a compelling image to tell a story - even with a reversed lens hood!

I'm with you - I'm not a big fan of filters (unless I specifically need it for some modification to an image), but I use the lens hood as an inexpensive piece of plastic to protect my lens against a bump/bash/smack from the front!

Because a lens hood is not needed 99.9% of the time. The only time I ever use it is in the rain. Storing it backwards on the lens is a convenient place to keep it if needed. I take it you never use filters. And I never believed in this myth of a lens gremlin just waiting around to scratch my front element. Been photographing 30 years and never hit the front of my lens on anything.

In your dreams maybe.

In reality, most REAL photographers take mostly
routine images of whatever stuff they are paid to
photograph. They do this reliably, on time and at
reasonable cost. Considerable creative effort may
be needed to reliably produce, in the real working
conditions, some rather routine, non-glamorous,
non-eyecatching images. And THAT is reality for
for most REAL photographers ... altho not for the
dilettantes who produce "Great Captures", when
the muse moves them.

If I did it, it would be to protect the lens which it does a pretty good job of. It also keeps it conveniently at hand, rather than your having to dig for it in a camera bag or pocket.

Since I don't know what I'm going to shoot (where the sun will be) when I go someplace, may need it, may not, it's just simpler to leave it on the "in use" orientation. Everyone does their own thing with them. there is no right or wrong, it just depends on whether one wants to use it or not. Sometime it's beneficial, sometimes it's superfluous. If the sun or side light is more forward than ≈120 from the front, I'm glad I have it on the lens. It's really no big deal for me leaving it mounted.
