There is (or was, its been many years,) a very nice N.C. gem and mineral museum in the area.
May not do much for your photography (though there are opportunities) but both Sierra Nevada and New Belgium have breweries in the area with tours. I would also add that Asheville is a bit of a mecca for micro breweries (Wicked Weed is a special favorite) and some truly great (and funky) restaurants (have at lease one breakfast/lunch at Sunny Point Cafe.
All of the previous suggestions for waterfall photos are excellent as the area is full of them.

I know that the signage states that photography inside the Biltmore Estate is not allowed. However, when I was there, guests were using phones and iPads to take photos inside in clear view of the docents without being hassled.
If you have a literary bent, be sure to visit Thomas Wolf’s house in Asheville.

Loc: Corryton, Tennessee
Near Franklin take Rt. 64 to Highlands and Cashiers. Lots of water falls and you can walk under one and it goes over you without getting wet. Very low key town with classy shops and resturants. The summer homes of people from Asheville and Atlanta.
Chocolate Fetish — not particularly a photo op but the best chocolate in the USA.

Smokey Mountain National Park has waterfalls all over the place. Cade's Cove should not be missed. Lots of trails and views.
Wheels Through Time Museum a little bit west in Maggie Valley!
Practically in downtown Asheville is the home of Thomas Wolfe, author of Look Homeward, Angel and other early 20th century masterpieces. The Wolfe home is believed to be the boarding house featured in Look Homeward, Angel. I hope the home is still there. My last visit to Asheville was more than 70 years ago.
I took a ride on the Blue Mountain Parkway heading North from Ashville and loved it. Many overlook parking areas.
When I was there 2 years age you were not allowed to take pictures in the estate .all so check out the winery on the ground they have some good wine + wine sampling.
A big second for Dupont State Forest. Multiple waterfalls and if it rains all the better.
You are visiting a wonderful area. If you have time, visit Cades Cove in the GSMNP. Also some areas of the mountains suffered mega rains, so some roads may be closed. It is my understanding that NC9, close to Bat Cave is completely blocked and requires a lengthy detour, so call ahead or do your research.
