If full frame 24-120 or close, if aps sensor 18-80 or close. One lens, one body, flash, batteries, you should be fine.
I go every Thanksgiving. I take two cameras and all my lenses and a travel tripod. I have found that I mount my 70-200 for the parade and then my 24-70 for walking around. This year I'm going to spend one day with a 16-35.

Be careful of "what streets you walk" I like Nikon's 18-200mm. I'm sure Canon has something close.
What borough are you going to take your stroll in?

I'd say it depends on the criticality of the photos and whether or not you are carrying a tripod or monopod. With a Full Frame Canon and something to stabilize it I'd try to go with a 28-300. Without a stabilizer and if the photos aren't critical I'd go with a simple 28-200 USM, if the photo quality is critical I'd go with a 24-105 L. I've not shot in NYC but I have in many other big cities and I feel the shorter focal lengths around 24-70 are used the most but every once in a while the 200 is handy and 300 would be nice however in my experience more than 200 is a waste without tripod or monopod to hold it still.

I was in NYC a while back and I'm a Nikon guy. But, I didn't want to carry a heavy FX camera with the 28-300 lens I normally use for a walk around lens. I opted for my mirrorless Sony NEX7 with 18-35 lens and it was perfect. The camera is very sharp, light and didn't scream "photographer." I got some great shots. Of course, the Nikon rig would be useful as a weapon if needed. :)
While there, visit the International Center for Photography. They usually have a good exhibition going on.
You are going to the home of B & H and Adoroma. A 24-105 will be a good start. Call the camera stores and get info on renting.

Seriously, if your bring your colt 45 unlicensed to New York you can end up doing serious jail time. A football player (can't remember his name) shot himself with his own unlicensed gun and ended in jail. Better bring a camera with a 17-50mm 2.8 lens. Have a great time. There is a book What to Photograph in New York City.
We have great museum the Met, Moma, Natural History etc. One site that I highly recommend going to is the 911 Memorial. I never would have gone there on my own but friends had tickets and wanted me to join them. If you don't want to buy tickets and go inside walking around outside is worth the trip.

I purchased a 28~300 approximately 2 years ago. It's been on my camera probably 90% of the time. However, considering city photography, I could probably get by with the 28~85.
