First, I am a customer there too, we just moved to Ohio about a year ago. We should meet up!
Secondly, I have had the same experience there, each salesperson pushes their preferences, but i do think it comes from a place of authentically wanting to help the customers. Still it is off-putting at times, especially when you are looking to invest significant ducats in your purchase.
Thirdly I am in the very same question Olympus or Fuji. I love the Olympus size, weight, build quality, IBIS (YAY!), lens lineup, etc, but am concerned about IQ in low light shooting which I have to do a good bit of. The Fuji has the best IQ of any cameras I have seen (to me, a very personal thing), fabulous build quality, and as of the X-T2 is competing for best in class auto-focus, they have great glass also. Depending upon your needs I think you would be fine in either system, but IBIS is really hard to turn away from for me. If I wasn't a school teacher (in the Arts no less!) I think would buy an Olympus Om-D E-M1ii even over the Fuji because of the combination of size and IBIS. But, as I am a school teacher I will probably have to wait for the Fuji X-T20 which will be lovely for personal use, but not really be enough camera for my needs at school. ah well. Hope this is useful.
I would wait, personally. If you can't wait, why not look at an OM-D E-M1ii? It will give you an even higher hires option in addition to a 20mp sensor. There are award winning togs who shoot m4/3 and unless you are shooting a lot in low light the m4/3 format can produce great shots. They are actually, even at 16mp slightly more pixel-dense that a 24mp aps-c, the surface area is the difference.
If you decide to upgrade let me know how much you'd like for one of your m5ii bodies and lenses.

Test...I should say test-driving. Basically just shooting. The OE in 1&2 are with intent.

I second looking at Macphun's suite of applications. Lightroom is a standalone product that is not subscription based (YAY!) but I personally despise the interface. Photoshop is (a fantastic fantastic product that i adore) a subscription-based model (now) which Adobe has done to milk it's customers pockets. Everyone has the right to make a living , but as someone who is an enthusiast, not a pro, dropping that cash is a significant investment, one that many can't afford to make. And depending upon how deeply you need to be working, if you are a Mac user, Apple Photos has a lot of the code from Aperture under it's hood.

The focus speed and the IQ are my main sticking points.
Olympus focuses quick, quick. The fuji is slower and struggles. At low ISO I am very happy in both. At high ISO the Only gets noisy in a very tv white noise type of manner. The Fuji gets noisy too, and doesn't stay quite as apparently sharp as the Olympus, but the noise on the Fuji at high ISO reads like film grain, which can be quite attractive. Can sopmeone please stick an X-Trans sensor into an Olympus body for me, pretty please? :-P
