I also use MacPhun products and have been pleased. I use Capture One as the main raw processor and editing program.
What kind of wifi signal is your router using, and what kind of router? The wifi capabilities of the two iPads are spec'ed identically so it shouldn't matter for comparison, but who knows.
The screen on the 2 iPad Pros are new, and easily better than the iPad Air 2. I moved from the Air 2 to the smaller Pro and if viewing pictures is your task of choice then I would get a Pro. the Apple web site will be happy to detail the screen issues:

To quote Doug Klosterman in his Canon 7DII Experience book, "video autofocus in the 7D2 is more viable than it has been in the past" due to the dual pixel CMOS AF.
I use the video on a Canon 7DII frequently. I shoot short clips mostly. They sometimes make an excellent complement to stills to record an event. Most recently whale watching off of Gloucester Mass. Video clips of whales showed the movement and sounds in a very interesting way. I am primarily a stills shooter of course, but having the option is really great.

I have taken a million baseball pics like that. I agree that the shallow DOF and possibly autofocus issues can easily explain your issues. It is fun to get the booked effect at 2.8 but you have to expect LOTS of missed shots to get the great one. If you don't want that, then the greater f-stop helps a lot. Anticipating the shot and setting it up before the action, and then letting the action come to you is tedious but effective if you want a particular shot. When I moved to the Canon 7DII with lots of autofocus options I had a bit more success (after the learning curve of course, which is still ongoing!)
