I would not bring the very heavy lens. If you plan to shoot BIF then I would bring the 100-300. Also if you plan to snorkel I would bring a waterproof camera - the pictures will be amazing. Don't overload yourself because the boats have limited capacity for weight. Good luck.
I have been to both the Galapagos and Quito. I also am a Canon user. Check first with your tour group because there usually is a weight limit for cruising on the boats. That being said I used the 70-200 a lot when we landed on the islands and it worked great. You will be up close and personal with all the animals. The 18-300 might be a great walk a round lens for city use. Don't bring a tripod. If weight is no option for your tour and you want to take BIF then your big lens would be nice. On these types of trips less is more. Also bring a waterproof bag to transport your camera stuff on the zodiacs. Have fun, it is a great trip.

I took a wonderful trip to Iceland, the land of waterfalls.
I went last year and loved this trip. I brought my 6d mii and my 24-105 and 70-200 canon lenses. I did miss some Bird photos but for the most part I was very happy. Check with your tour group about weight restrictions. They only allow so much luggage on the boats if you are planning to cruise the islands. You spend a lot of time in Zodiacs that are bumpy and sometimes wet with splash, so keep that into account. Probably if you are not bringing a tripod, I would say that less is better. When you land on the islands a 70-200 is more than enough reach. Have fun.

I took a walk along the Hudson River past the Lyndhurst Castle. In the nineteenth century the Hudson River Valley was the center of progress in painting and architecture. Wealthy patrons commissioned the construction of mansions in a variety of styles along the Hudson. This castle was designed in 1838 by Alexander Jackson as an example of early Gothic Revival style. Over a hundred years the house was owned by NY mayor William Paulding, merchant George Merritt and railroad tycoon Jay Gould.

Its not really a park, but more of a path that runs along the Bronx River Pkwy. People bike and walk along the path that starts in Tuckahoe and goes to Scarsdale. They are working now to connect all the way to the Kensico Dam in Valhalla.
