Canon Rebel t3i question

after my young niece was playing with my camera it will only shoot a shot in Auto Mode. When I try to use Manual some setting is not right. Picture turns all white after it first displays it almost all black. Auto Mode is fine. I am new to this camera and have no idea how to reset the settings. If some one can give me some help it will be appreciated!
Step by step works best for this newbie!

it only took about an hour and recovered over 900 photos.

Thanks for the info....Recuva was able to recover most of the photos. It didn't get them all but it got the last few which are the ones I was hoping for!

I accidently deleted photos on my memory card and was wondering if there is any way to recover them? I have not used the card and was hoping there was a way to get them back? They were really good shots!!!

I see friends photographs and some of my professional friends who have a signature added like water mark. Is this something I add or is an option on my camera. I have Canon T3i.
