Bad advice here Nature Shooter. You should not have 'competing sizes' (5 x 7 and 8 x 10). If you have 8 x 10, then don't have 11 x 14. Buyer will most likely go for the cheaper one. Some shows (high end) require numbered prints so check the rules carefully. And most of all I am not in agreement of your opinion that MOST arts and crafts show are one step above a flea market.....you apparently choose the wrong shows to go to if you go at all. Yes, I agree there are some shows that call themselves art and craft shows and theses are your local town/city fund raisers and are a step above a flea market but there are a significant number of shows that are actually ART shows with high end crafts.

Nature Shooter, you are doing the right thing visiting shows first.

Look at the detail in the water. First one captured the ripple but the second one is smooth. I'd stick with the canon.

Old Car City just north of Atlanta if you are into old rusty cars and trucks. There is the Southeastern Railway Museum for vintage trains buses etc. Google both.
