Do not shoot in AV use manual as the camera will, if you depress the shoot button automatically re expose for the shot. Manual obviously wont. I get round this with my 7D by programming the back buttons to focus leaving the shoot button to only expose & shoot. Hope this helps a little )

Nice shot, may i make a suggestion? when using HDR it tends bring out detail within the image washing it out a little. Try ramping up the contrast a little as it helps keep the washed out whites in tow )

You'll probably find that the areas mentioned with issues are probably most likely user issues! not a Canon issue.
