Tom, you are correct ... the drying of the tobacco is done in the large barns by hanging the plants on stakes and then hanging them in the "tobacco barn" Really like your photographs.
Based on my early years, I would guess this was a "tobacco strippin shed". The tobacco leaves were often stripped from the stalks in cool or cold weather and needed some heat from a "wood stove".
