Actually, you take two pictures, one without you in it and another with you posed on a stool or something. Combine the two pictures in photoshop and remove just the stool.
What you are going to do with your pictures after you scan? For viewing on screen 72 dpi is fine, but for printing later go 300 - 400 dpi. The higher the better. More dpi means bigger file size. Higher dpi works better in photoshop than would a lesser dpi picture as well.
About the number of pictures on an SD Card -9999. On my canon 60D if I ever in my life time reach that number of pictures, my camera will just make a new folder and keep on clicking.
I just set my canon 60D to adobe RGB but the Numbering stayed the same. IMG_XXXX.jpg. Tryed again with my Rebel XTI to adobe RGB and it went to _MG XXXX.jpg. Canon only offers two color space - sRGB and adobe RGB. I use sRGB. Choose which one you want and go with that.
You changed your sRGB setting in camera to adobe RGB maybe?
I did this at one time with XTI. Took awhile to figure out what was going on.

If you have a UV filter on your lens, remove it. I think that causes the ghost Moon. Then go to manual. I had this same problem myself.
Remove the Date Stamp and do more than just one photo at different angles. I like this shot - very good.
If I may, your subjects are "back lit". Look were the sun is. Try shooting with the sun behind you and to your left. the sky will be blue and your subject lit by the sun w/o flash.
