As someone already suggested, Anthony Morgantti videos is a good place to start. I would add Jim Nix to that list (type in Jim Nix Luminar AI.) I just finished processing all my photos from a Key West FL trip in December, using Luminar Neo. I also have Luminar AI and do like it a lot, but added the Neo software to my M1 MacMini in case Skylum abandons Luminar AI in the near future.
Having said all that, I see no real reason for you to switch from AI to Neo, unless you use the templates and presets most of the time or if you find that Neo offers more needed tools than Luminar AI. When I use Neo, it is usually in manual mode by selecting the "Develop" tool . I shoot exclusively in RAW format (Nikon.) I use Topaz software (Denoise, Gigapixel, Sharpen & Topaz Photo AI) for exactly what each software is programmed to do, because Topaz does a much nicer job with noise reduction and sharpening. I adjust the white balance, cropping, highlights/shadows in Luminar and then export in TIFF format to Topaz for any further processing.

I don't think I could have bought a comparable Mac product for what I paid compared to what I was able to put together with what I already have. For me, it's a great system.

I have the same exact set-up as mentioned above, including the Satechi dock station. The main difference is that I have my M1 Mac Mini hooked up with my LG-OLED 65-inch TV, instead of using dedicated computer displays. I'm very pleased with the performance of the M1 Mac Mini vs the Intel i5 Mac Mini.
