Here is an idea that might be fun for beginners. Its called the alphabet photo. Take a photo of an object that begins with each letter of the Alphabet.
Great photos of the Blue Birds. I had 3 visit me this early in January of this year.
Sarah, I would have the kids get a camera and give them a different subject to shoot each week. One week, may be animals, if you live near a zoo go on a safari and shoot zoo animals. They never seem to mind having their picture taken. Next week trees etc sky's the limit. Another week is street photography. Just shoot scenes of streets, buildings, people etc. Have fun.
Here are my three photos for the photgraphy contest!

"Boarding the train in Kirkwood, MO.

I found this photo on face book. I wish it were my photo. Enjoy.
I too have a Cannon Power Shot S21S camera. They take an amazingly good photo.
Great captures of trees. This tree is located in the Animal Kingdom at Disneyworld at Orlanda, Fl.
It is called the upside down tree because the branches look like roots of a tree.
Photo taken near where I live in St. Louis, Mo
