Listening to that was the worst mistake I ever made in photography. When I finally installed the Canon raw program and looked at raw files I was blown away. As it is I have 5 years worth of shots - thousands of images - that I wish I had the raw files for.

Working with raw files is not necessarily just for fixing mistakes, is not more time consuming, and does not necessarily require special processing skills nor expensive software.

I spend a few minutes with raw files, typically, making minor adjustments to taste - not correcting but rather perfecting in ways that are impossible with JPEGs - and then export in the TIFF format. I could export then as JPEGs, but I like to do that with my old standby Paint Shop Pro - habit, really.
For sure. I was blown away too except it only took me a month to start shooting RAW+JPG. The JPG is for social media and E-Mail.

When you view a RAW file your software is showing an embedded JPG for the purpose of viewing. PP a RAW file gives you much more latitude in your adjustments and several that are not available to a JPG format. When a camera saves a JPG it throws away all the info not used by the cameras decision which is a lot and compresses whats left. RAW lets you pull out shadow and highlight detail, color balance in a couple ways such as white balance and tint, contrast, ......

Spoonbill taking flight was from a rocking/moving boat on Sarasota Bay at a small Mangrove island off Siesta Key. It was very windy and all the other birds were hunkered down into the mangroves. D750 w/ 150-600 Tamron G2 1/800 f/7.1 ISO 200 @ 600mm handheld. Osprey bringing home a stick is at a Nest box at the Bay at the end of Whitfield Tamron G2 1/1000 f/8 ISO 200 @ 600mm handheld. I think I'm getting better at holding this combo.

I bought a 150-600 G2 last October after comparing/testing on my own body against a Sigma C and a Tamron G1 that was borrowed from a friend. The first 50 or so first shots with the G2 were soft especially at 600mm. I needed to refine my hand holding techniques and up the shutter speeds. My shots are now much sharper. The G2 is scary sharp at 150mm. Download this shot of my Min Pin and zoom in. You will notice a little purple stitch on her snout where the Vet removed a cyst. You can also see a reflection in her eye of myself taking the photo. Handheld at 150mm 1/500 f5.6 Iso 400 with D750. Downy woodpecker was in my oak tree in deep shade. 600mm at 1/640 f/6.3 and let the ISO go to 2500 and leaned on the back of my SUV. I had forgotten to turn the VC on for both these shots and both are JPG with no processing with the camera in Auto. The VC seems to work very well in mode 1. I don't forget VC-ON anymore and it shows as lots more keepers. Try fine tuning your techniques first. You may find out as I did you don't need any adjustments to camera or lens.
