I think the photographer, camera, and lens should be of comparable quality for the most efficient results. If on is much weaker than the others, it needs to be upgraded to match the others. If one is much stronger than the others, it will generally be wasted.

The best photographer will not create masterpieces with poor equipment. And Tiger Woods will not win the Masters with average clubs. :-)

Welcome. If you get the Canon Lots of Canon glass to be had. Seems like you couldn't go wrong with either. All the aftermarket glass is available for both so Maybe, go to the camera store and see what fells better in your hands. Thanks for your military service.

What to do with photos

Picasa works for me. Directory on the left and an endless row of pictures on the right. You can rename the folders in the directory. I had in instructor in Hutchinson KS. tell the class to organize their pictures in Picasa. It's a free download.
