The noise is not the shutter so much as the mirror, You could shoot with the mirror locked, although you would have to do it without a viewfinder.
I've never tried it, but if faced with that problem, I imagine you could devise something with a hunk of foam rubber or even a thick towel. Might not look very pro , but it probably would work.
Interesting that some cameras (like my Samsung point and shoot) actually have a feature to generate that reassuring shutter noise electronically.
Or, as someone already has suggested, use a non SLR. Again, my little Samsung, although not as handy to use as my Canon Rebel, still produces superb images.

Use the magnetic lasso to outline the two people, setting a fairly low feathering value so that the edges of the image remain sharp. Then invert the selection. You then can eliminate or replace the background. I would be inclined to just blur it with Gausian blur and darken it and/or reduce contrast.
I also think you could "goose" the image a little with more contrast and a shift from the near sepia to crisper blacks

Yep. I'm not one of those idiots who think that Muskoka, beautiful as it is, is "northern" Ontario.
We get a kick out of the Torontonians who "go up north" every weekend.

We've just had our first significant snowfall. Nothing lovelier than a snowy morning in Muskoka.
Are you still in the UK?
I'm just back recently from a week of hiking in Yorkshire. First time for me in that part of the UK although I have been in England many times.

Hi... This looks like a very interesting site indeed. Already wasted more time on it today than I can afford.
We get to Barrie now and then although the traffic is getting to be as bad as Toronto's.
One minor point :-)
Please don't call it "the Muskokas." There's only one Muskoka and that (and "cottage country") is a sore point with those of us fortunate enough to live up here.

I'm a 78 year old retiree who lives in the Muskoka region of Ontario, an area so beautiful it is almost impossible not to take a great picture.
I've been playing around with photography since I was 13 but can't say I miss the darkroom.
I shoot with a Canon Rebel, usually landscapes but also candid shots and patterned subjects. (My old Pentaxes, Rolleiflex, Speed Graphic and Retina have become bric-a-brac.)
I also do video but I am not as serious about it as my still work.

Several reasons..
My 50mm is 1.2 which is ,much faster than my 3.5 zoom. That not only lets me shoot in poor light but also gives me more flexibility on aperture and shutter speed. Indeed, my 50mm saved the day while I was shooting a theatrical event where I could not use flash and where the light was very low.
Also the 50mm lens is smaller, lighter and more rugged.
Perhaps the best reason is that shooting with a prime lens changes the way you think. Instead of zooming in or out, you change your position and that often opens up new possibilities.
Canon have a really good 50mm lens for about a hundred bucks.
