Regis. It just goes to show, that your 6d and your Big Sig are a great combination and no matter what some folks say about 3rd party lenses. In the right hands the Big Sig shows 'em. You nailed it man !!

Why shoot at F11 why not f5.6 or wider with that lens, which would automatically give you a faster shutter speed , then if not fast enough to get sharp pics the 7d would allow you to go much higher on the ISO. Possibly also you were moving more than the stabilisation would allow at the lower shutter speed. If it was poor light a tripod or monopod would have helped.

The early morning light is much nicer in which to capture some stunning images of these great looking birds. The afternoon light is almost as good, my image was taken just after lunch(have to be off the island by boat before 3pm). Did you know that the cattle Egrets hang around in groups, the little Egret is always on his own, the Great white Egret does both of these things.

Vicky. Looks like your Egrets have slightly thicker beaks at the tip.

May I suggest the egret in the tree is a Little Egret with the black beak. The great white Egret has a yellow beak as in your 1st image
