A Metabones Canon EF to Sony E-Mount Adapter will set you back another $400 on top of a Sony body that is not a game-changer vs Canon's two 50MP bodies nor the 30MP 5DIV.

is spozed to be on adapters and compatibility.
The EF lenses on the E-mount bodies are very
useful, but certainly don't behave like native
E-mounts. I don't have the a7-3 but I do use
adapted EF lenses on an a6500 which is quite
similar as to tech level and firmware. AF-S is
pretty quick, maybe 1/4 sec, using PDAF. The
CDAF is crazy slow, like using a Canon SLR in
Live View AF mode. AF-C is not reliable.
USM ring drive lenses AF best. STM lenses AF
fast enuf to be useful. Other lenses, mostly
non USM older lenses, will hardly AF at all.
There may be some difference using an a7-3
rather than an a6500 ... but it will be similar.
