A lot of great landscape photos are finished in PP . As long as you have a great composition a lot can be added in PP.

While we are at it, what subject do you find the easiest subject to take a shot of? Mine are plants/flowers.

Most challenging: grandkids, especially the youngest ones at play.
Easiest: anything that sits/stands still and is not backlit.

People, as I don't enjoy portraiture. Of what I do like, I have a hard time with Pets. All I get are sleeping dogs or cats. I'm much better with flower close-ups and other small object studio images.

The easiest and most difficult are both the same....flowers. Living in the NC mountains where we do, there are literally hundreds of varieties of wildflowers. Some grow in places that are very difficult to get to. Others are just an easy shot. The real stickler in all of this up here is the wind/breeze. While it is pleasant during the warm months, it can be a bit difficult during the winter. But, at both times it can drive you crazy trying to time a shot for that brief second that the air stops moving.

Anything that requires flash or artificial lights. But part of problem it does not get my interest.

Physically: Birds in flight. Tracking fast moving objects with heavy lenses.

Artistically: stationary items. I have trouble with artistic composition.

Everything, at one time or another.

Sometimes, the lighting isn't just right, or there is something/someone blocking my view, the subject keeps moving, etc.

To the uncooperative subject I often say “C’mon, in 10 years you’d like to look this good.”
