Mine are birds in flight, against the sky.
What subject do you find challenging?
While we are at it, what subject do you find the easiest subject to take a shot of? Mine are plants/flowers.
I cannot get a good shot of my uncooperative cat! I find landscapes to be easy.

I never really thought about it!
Most challenging - indoor still life. I have trouble visualizing objects that go together. I don't have a sense of design though I know what's good when I see it.
Easiest - closeups of outdoor objects - flowers, weathered wood, the odd thing that catches my eye. My 50mm f 1.8 is my friend.
“Landscape photography is the supreme test of the photographer – and often the supreme disappointment.” – Ansel Adams
I agree with Ansel.
Easiest-photos in which I have an idea and complete control of setting up everything.

Small birds in flight seem to be my Rubicon!
When you are new it's all hard but I especially struggle with still life. I think that is because arranged objects just doesn't say anything to me. Easiest is candid portraits of children. Just turn them lose and let them be themselves.
Flattering portrait photos of people. Timing is nearly always after the smile has faded or when the eyes are closed etc. Next most difficult is really good landscapes. People start with landscapes because they are easy, then stay with landscapes because they are so hard. Easiest is sunsets and sunrises over the water. Those have become such a cliche that I don''t shoot them any more.

BIF's most difficult. Anything that is stationary, much easier. vz

hardest:
shooting mist.....it always looks pretty but the image is dependent upon the position of the sun in relation to what you shoot. Mist is not always there, Plus you have to be quick.
easiest.
shooting evening light (I'm wide awake and usually have had a couple of hours to get into the mood)
Woodland ( any day, any weather, anytime: if you cannot find something You are not looking!)
have fun
Hard - people panoramas.
Easy - flowers.
Hot, good looking young babes.
I like prefer that don't move any faster than Continental Drift.
Hardest
Indoor events with low light. I am too shaky for slow shutter speeds and I like to avoid flash if possible. I keep working on it though-bounce flash works if I have to use it although my camera will only go to 1/200 with the flash and sometimes that is not fast enough. I do bump up the ISO and hope to not get too much noise
