Seriously, pull your car onto the shoulder of the highway as far as you can from the roadway for your safety.
I say so because I've many times seen cars pulled off the highway only enough to get the wheels off the pavement. Then, opening the driver door opens it into the traffic lane. A person standing between the car and the highway also edges into the traffic lane.
I agree with the opinion that if a subject remains visible from the highway, then you may take its picture.
