How to know when to NOT go by a photography equipment store.

That's true -- the "camera" is more easily seen by people you're trying to take a candid shot of. The cell phone as you said, hell everyone has one of those up in the air. I like the camera options on my iPhone 8+ but it still isn't a DSLR. My cheap-o T6 will still take a better picture and it costs less money. Then I wifi the pic to the cell phone and it saves to the cloud right away.

I don't think anyone who can't take better photos with their DSLR than their cell phone isn't going to do better with a mirrorless.

What kind of DSLR? Your cell phone is limited in many ways that a DSLR is not. Quick test - download an image from your cell phone and blow it up to 100% and tell us how noisy it is. Zoom that cell phone in to 300mm equivalent - how does that work for you. Attach an external Flash - I think not. But hey, if your happy taking pics with your cell phone then have at it.

Yes, but that could include not insulting the camera. An artist or technician should not blame his or her tools, only their own misuse or perhaps poor choice in a tool. I really don't believe there are many bad cameras ever made. I've seen good images taken with a Brownie camera, and poor ones taken with a Nikon D810.

I can actually get pretty good images with my Note5, but it is no substitute for a DSLR. Over the years I find I get both great and mediocre images at various times from all the cameras I've used. Those include my current Samsung Galaxy Note5, Kodak digital P&S / Bridge camera, 4 DSLRs, many SLRs, 35mm rangefinders, 6x6cm TLR, 6x7cm Medium Format film cameras, 4x5" View Camera, and at work with a 8x10" View Camera. And any problems were my fault not the camera's. With some practice I can probably use any camera. To master it, that takes time, and I'm still working at that. Since it is a hobby these days I have plenty of time to learn and practice. But no time to blame the tools. If I were to find a camera or lens that is actually defective, I'd just move on. For me it is mostly finding the equipment's limitations and my own and learning to overcome. And that is a continuing process.
