Going on Viking cruise from Barcelona with stops at Marseilles, Arles, Monaco, Dubrovnik, Corfu, Itals , ending in Venice.
Later in the year going to Africa for 2 weeks.
I have a Nikon D-7200 with 18-300, 16-80, 12-24, and 35mm.
Also have Fuji X-T2 with 55-200, 18-55, and 18-35. also have the FujiX-100f.
Which cameras and lenses should I take on each of these ventures?
Should I consider getting a D-500 to replace the D-7200?
Am confused and need your input and suggestions.

Sounds more like you are bragging about your trips and equipment.
If you are capable of making these trips and purchasing yourequipment I should be easy enough for you to know what to take.
Take them all. That way you won't be saddened if you brought the wrong gear for the anticipated trips.
Have a great time on the cruise. I have been to Barcelona several times and never seem to allow enough time there. It is a beautiful city and photo opportunities abound. If you can I would allow at least three days prior to the cruise. Sagrada Familia is incredible as is the Las Ramblas area.
As for your equipment choices I took acNikon D800 with the 24-85 lens and I think a 16-35 lens. They did well both on the ship as well as excursions. You might take your longer lens though if you like longer distance photos.

I concur. The more I travel, the less equipment I find I need. The Fuji XT2 is perfect for me and the quality of images is as good as it gets. I don't have the 100F, so cannot speak to that.
Forget BOTH! Get a Canon T7I like I did and be set for Life! (great deal from Greentoe.com! ( $666 for body only)
Sell the Nikon and just go with Fuji.

Quick answer: if you're going alone, bring everything, but if you'll have company, travel light.
The Fuji with a wider tele in the 200mm range would be all you need.
It looks like the 18-135mm is the best you can do.
https://www.switchbacktravel.com/best-lenses-fujifilm-x-t2I travel with one compact camera and one lens. It removes a lot of potential stress, especially if I'm traveling with someone. Whatever you decide to bring, do a lot of practicing with it ahead of time.
The XT2 and the 18-55. Forget the rest unless you like to carry stuff.
Personally, I would limit myself to your favourite camera and lens. I did a cruise with the same itinerary, all of these places are packed with tourists especially Dubrovnik and Venice so you won't need to be lumbered with a ton of camera equipment. I do have an Olympus EM10 with a 4x zoom, but when visiting places such as you are going I do use a good P&S so I don't stick out like a sore thumb.
With the exception of Arles which is inland and not a port, all the other ports except Venice and Monaco are quite a long way from the towns and you will need a taxi or coach to reach the town centres. In Venice, you will need to use a water taxi (Vaporetto) although your Viking cruise may provide transport, in Monaco however you could walk but remember it's very hilly and the climb up to the Palace is very long and steep. When in Monaco time permitting you can catch a train to Nice or Ventimiglia (Italy) both pretty places especially Ventimiglia.
