If you are satisfied with the images your 18-300 gives you I am going to say that is all you need for your cruise. It will be convenient since you will only take a camera and a lens. Your Fuji with 55-200 and 18-55 should also be a good choice.
For your African trip that is a different story if you plan on shooting wildlife. Now you need a long tele and I would say 400mm is about right. With good light a Sigma or Tamron 150-600mm could be a very good lens to use. A prime 400mm is going to be expensive although you can always rent one. Those lenses are excellent in quality but heavy.
Your D7200 I know is a very good camera and should be up to the job. Others are going to tell you to go for the D500. I use a D7000 and if I was going to Africa that will be the camera I would take with me. I am not a happy shooter and I do not fire at 10 FPS.

I have traveled to most of the European locations with a Fuji X-T1 with the 55-200 and 18-55 and find I used the latter far more than the former, about 65/35. I also carry a Fuji X 100S, just to make sure I have a camera with me at all times. I have a number of single focal length lenses for the X-T1 but tend not to use them for travel. Travel light.

Go light! You'll be doing a lot of walking and the last thing you want is to wear yourself out hauling your gear. Take the Fuji, the 55-200, and the 18-55. The camera will be less obtrusive. You might also consider adding a theft-proof strap. Think about picking up or renting a 35 or 50 mm equivalent prime with 1.8 (less expensive) or 1.4 (expen$ive) aperture.

Take the Fuji’s. For Aferica you might need a longer lens.

From all of my travels I have always appreciated having the lens with the longest reach with me as one of my choices.

I say bring all or whatever you are most comfortable with as it sounds like most of your subjects won’t be moving. And since you’ll be on a cruise ship you can leave what you don’t use in your room. As the D 500 takes great photos, it is known more for It’s ability to take fast and moving objects birds etc, and wouldn’t be necessary for stationery items You’ll be shooting also has a few less megapixels.

For Africa, from reading other responses in the past, you will want two bodies. Since you want reach for Africa, take the D 7200 and your 75-300 and a wide angle lens on the XT-2. The best advice I have read on UHH for Africa is do not change lenses during the day because of dust issues.

I did a Viking cruise a few years ago and I’m doing another in May. They are marvelous. You will enjoy.

I took my D5300 and Sigma 17-50 f2.8. I left my D800 and kit of lenses home. It worked perfect and I was glad to not be schlepping more stuff. I also brought a tripod and didn’t use it.

In May I’ll do the same although now the D5600.

Africa is another matter. Spend your money on a Nikon 200-500 and take the D7200.

I took the D800 and 200-500 on my Africa trip a couple years ago and was satisfied but could have used the additional reach of a DX a couple times.

Weight was not a factor on my trip as we chartered our own plane.

Fuji X-T2 but with a 18-135. Light, still small, great image quality. Never have the hassle of changing lenses while others wait, and never miss a shot.

Go with Fuji because of quality and weight. If you want to travel as Light as possible and reduce risk of theft, go with the 100F and 1-2 lens that give you the range you need!
